Crockpot Cajun Sausage Soup

My daughter wanted to name this soup "Hot dog Soup," but I refused. I did get her help to make it, though! I love when she wants to help me in the kitchen. I had no interest helping my mom, hence the reason I'm learning everything now!

I decided to start coming up with recipes for all my mom friends who are just sending, or about to send, their kids back to school. I've always thought, "wouldn't you have more time then?" But I've learned while watching my younger siblings during the school year that this isn't so!

This recipe is a little spicy! You could add a different type of sausage and cool it down, skip the green chilis and crushed red peppers, or add more crushed red peppers, cummin and other spicy things to make it more spicy. This was pretty spicy as it was for us, we loved it!

Crockpot Cajun Sausage Soup
1 package of Aidells Cajun Style Sausage
4 potatoes
1/2 yellow onion
2 garlic cloves
1 can black beans, washed and drained
1 can green chili
2 cans chicken broth
1 6 oz can tomato paste
1 tbsp crushed red peppers
Pepper to taste

Line crock pot with liner or spray with olive oil. Add chicken broth and tomato paste, stir. Cut sausage, potatoes, onion, and crush garlic, add to crock pot. Add beans, green chili, and seasonings. Cook for 4 hours on high, or 6 hours on low.

This would be 1 red, 1/2 green, and 1 yellow per serving.

  2. What size cans for the chicken broth and green chilies? What type of potato is used...new, idaho? Thanks!

    1. 16 oz cans of chicken broth (or stock) or you can use the 32 ounce container. The green chili can is 4 ounces. When I made this the first time I used the Little Potato company potatoes, they are tiny little potatoes. I have used big potatoes as well. You can try any kind!

  5. What would you count the broth as ? I didnt even think we were allowed having it because of the sodium also i didnt know we were allowed having sausage... Looks good though

    1. Use chicken sausage (Safeway carries this style in chicken sausage) and low sodium/non-fat chicken broth. 2 cups broth equals a 1/2 red.

  7. Tried this as written and it was way too hot for me. Removed the green chilies and red pepper flakes next time and it was perfect. My favorite soup recipe.
